The Complete Italian Vegetarian Cookbook: 350 Essential Recipes for Inspired Everyday Eating

The Complete Italian Vegetarian Cookbook: 350 Essential Recipes for Inspired Everyday Eating Review

This uniquely accessible collection draws together the best vegetarian recipes of Italy-350 in all. 'Pasta and pizza may be Italy's most eye-catching exports, but it is the country's varied and sensible use of vegetables that provides the best inspiration for American cooks,' writes Jack Bishop. 'Asparagus spears coated with a little olive oil and roasted to intensify their flavor; thick slices of country bread grilled over an open fire and topped with diced tomatoes and shredded basil from the garden; or a fragrant stew with fennel and peas-Italians enjoy these dishes because of what they do contain, not what they don't.' Many of the recipes were gathered by Bishop during extensive travels throughout Italy. Some are family favorites, adapted from those of his Italian grandmother. All deliver perfect results with a minimum of effort. Serving suggestions for each recipe make planning vegetarian meals easy.

The Italian Country Table: Home Cooking from Italy's Farmhouse Kitchens

The Italian Country Table: Home Cooking from Italy's Farmhouse Kitchens Review

The Italian Country Table: Home Cooking from Italy's Farmhouse Kitchens Feature

  • ISBN13: 9780684813257
  • Condition: New
  • Notes: BRAND NEW FROM PUBLISHER! 100% Satisfaction Guarantee. Tracking provided on most orders. Buy with Confidence! Millions of books sold!
Lynne Rossetto Kasper's authoritative first book, The Splendid Table, explored the food and culture of Emilia-Romagna, Italy's culinary heartland. In The Italian Country Table, a collection of 200 regional recipes gathered from farmhouse cooks, Kasper once again provides cultural investigation and authentic, workable recipes. The resulting cookbook-cum-chronicle will appeal to anyone seeking delicious, down-to-earth dishes and an introduction to cherished culinary traditions.

Covering every course of an Italian meal--from antipasti through pasta to vegetables and, of course, dessert--the book weaves recipes with vignettes exploring, for example, Puglia's ritual drying of winter tomatoes. Included also are notes on buying tips, special cooking techniques such as glazing, and discussions of culinary moment, like the nature of a true risotto Milanese. The immediately inviting recipes include such temptations as Mushrooms Stuffed with Radicchio and Asiago, Hot and Spicy Eggplant Soup, Leg of Lamb Glazed with Balsamic and Red Wine, and Espresso Ricotta Cream with Espresso Chocolate Sauce. Kasper also offers a chapter on focaccia, pizza, and bread, as well as menus, shopping sources, and a useful discussion of ingredients. (Taste before you buy, and then pause, she advises. "Aftertaste can reveal how a food's been stored, careless production, or foods going from mature to over the hill.") Concluding with a guide to Italian guest farms, folk life museums, and places to eat and shop, the book is a comprehensive introduction to basic but inspired home cooking and the traditions that both contain and nurture it. --Arthur Boehm If you dream of Italy -- and who does not? -- be prepared to fall in love with this extraordinary cookbook. Written by Lynne Rossetto Kasper, author of The Splendid Table: Recipes from Emilia-Romagna, the Heartland of Northern Italian Food (winner of both the James Beard and Julia Child/IACP Cookbook-of-the-Year Awards), it is every bit the equal of its celebrated predecessor.

Read its exuberant pages, eat its lusty dishes, and you enter a landscape vibrant with rural life. You are one with the terrain. In some sense, you are home. That, of course, is the miracle of Italy -- no matter where we come from, we want to be a part of it. And the miracle of The Italian Country Table is its ability to take us there.

And what a journey! You will never be as impatient to get into your kitchen as when you are planning a meal from this book. Two hundred recipes, personally collected from home cooks throughout the length and breadth of Italy, will keep calling you back.

Who could resist the "Gatto" di Patate, a mashed-potato "lasagne" from the Neapolitan countryside? Or a Tuscan Mountain Supper of warm beans tossed with an herbed tomato sauce and eaten with tart greens? Or Pasta of the Grape Harvest, a Sicilian dish of grapes, red wine, orange zest, spices, pistachios and linguine? Or Chocolate Polenta Pudding Cake?

Kasper, host of Public Radio's The Splendid Table, is a master teacher who thinks about cooking in a way that is radically distinctive. Her chapter on tomatoes and tomato sauces, a treasure by itself, will change the way you think about them -- and cook them -- forever. Her guide to buying and saucing pasta contains more useful facts than many books that devote themselves to pasta exclusively.

Kasper, the grandchild of Italian immigrants, describes herself as someone with a love of lingering "in places where life changes slowly." This personal book abounds with stories of artisans, farmers and family. It is a portrait of Italian country life.

Where you read The Italian Country Table, cook from it or use it to plan a trip (there is an appendix that lists guest farms, country hotels, restaurants and museums), you have only to turn its pages to be transported to a rustic Italy that few of us know, but all of us long for.

* 16 pages of finished dishes in full color

* 50 black-and-white photographs of country life

Pasta (Italian Pantry Collection)

Pasta (Italian Pantry Collection) Review

Each Italian Pantry book is unique in style, content and recipes. A short history of the Italian food product is followed by a detailed description of the production techniques and notes for evaluating and appreciating the regional differences. Italy has a very complex food culture, with distinctly different cheese, pasta, olive oil and cured meats in each region and even within certain towns. These books take a geographical approach to the regional specialties, with maps showing the area of production, notes on the product of that region and typical recipes using the distinct produce of that area. The Italian Pantry books are valuable references for culinary students and professionals as they are scholarly and technically informative. Lavish colour photographs of each type of cheese, pasta, olive oil, cured meat and prepared dishes (with recipes), provide a very pleasant browse or read. Over 32 different Pastas from Agnolotti to Tortellini.

Outside of Italy, the country’s culture and its food appear to be essentially synonymous. And indeed, as The Italian Way makes clear, preparing, cooking, and eating food play a central role in the daily activities of Italians from all walks of life. In this beautifully illustrated book, Douglas Harper and Patrizia Faccioli present a fascinating and colorful look at the Italian table.

The Italian Way focuses on two dozen families in the city of Bologna, elegantly weaving together Harper’s outsider perspective with Faccioli’s intimate knowledge of the local customs. The authors interview and observe these families as they go shopping for ingredients, cook together, and argue over who has to wash the dishes. Throughout, the authors elucidate the guiding principle of the Italian table—a delicate balance between the structure of tradition and the joy of improvisation. With its bite-sized history of food in Italy, including the five-hundred-year-old story of the country’s cookbooks, and Harper’s mouth-watering photographs, The Italian Way is a rich repast—insightful, informative, and inviting.

Several years ago, on a break between theatrical gigs in Alabama, Mark traveled to Italy and fell in love with the people, food and culture. Armed with just enough courage, minimal Italian language skills, and a certain proficiency in the kitchen, he enrolled in a full-immersion cooking and language program. He would travel to Viterbo, Italy and live with an Italian family. His teachers were beyond his wildest dreams-he learned to cook from the grandmother, or Nonna, of the family, who prepared every meal in a bustling, busy household, as women in her family have done for generations. Her daughter, Alessandra, taught him the language with patience and precision. Besides culinary secrets and prepositions, they opened their lives to him, and made him a real part of their extensive family. Though the book contains authentic, delicious family recipes Nonna shared with Mark, Beyond the Pasta delves into food memoir subject matter not found in a typical cookbook. It was the day-to-day shopping with Nonna, exploring the countryside and le gelaterie, where he truly developed his language skills, and a new, more joyful and uniquely Italian way of looking at the world.

Trulli Italian

Trulli Italian Review

Please allow me a moment to describe my pasta cookbook and why I feel it is unique. On the cover of my cookbook are pictures of the exotically beautiful Trulli houses only found in my Grandfather's region of Apulia in southern Italy. The title of the cookbook is obviously a play on the English adjective Truly and the Italian word Trulli for the unique beehive cone houses found in Apulia. (Puglia in Italian). No one really knows the origin of the structures but they are thought to be of Greek Byzantine origin when southern Italy was a part of Magna Graecia. I have lived and studied in Italy for over 6 years and studied the culture for many years. I am the typical Italian-American father who knows his way around the kitchen with a unique view of how pasta dishes are prepared in Italy as well as how to use American ingredients to quickly prepare authentic Italian condiments and sauces for pasta. Here are some of the components of my Italian pasta cookbook based on the village of Cisternino in Puglia, Italy:

- A Helpful list of items to stock in your Italian kitchen to assist in the procurement (shopping) and preparation of the recipes in the cookbook
- Over 100 recipes if you count the variations I included on many recipes
- Tips on preparing Italian pasta condiments and the one big secret my Italian relatives passed on to me for making sauces more flavorful
- Pictures and captions about the exotically beautiful town of Cisternino and the surrounding Valley of Itria with its Trulli houses
- One-pot pasta meals that can be made in 30 minute or less; my cookbook is about speed, authenticity and flavor
- Gourmet-style dishes made simple with easily obtainable ingredients; no dishes too difficult to find ingredients for.

Although there are a plethora of Italian pasta cookbooks on the market Trulli Italian combines regional Italian cooking with the insight of an Italian-American (me!) who has lived on both sides of the Atlantic. I have the ability to translate dishes so my fellow Americans can easily replicate authenticity the true casalinga or home-made Italian meals.

Italian Family Cooking: Unlocking A Treasury Of Recipes and Stories

Italian Family Cooking: Unlocking A Treasury Of Recipes and Stories Review

Father Joseph Orsini, a retired Catholic priest, has found his second calling in the kitchen. In this book, he shares his love of food and family with delicious recipes and delightful anecdotes.

With chapters arranged to coincide with the courses of a formal Italian dinner- antipasti (appetizers), ministre (soups), pasta with an astounding variety of sauces, risotti (rice dishes), secondi piatti (main courses), and desserts-- this book is a rare combination of Old and New World recipes for such exciting and mouth-watering dishes as portobello mushrooms in garlic and wine sauce, linguine with mussels Calabrian style, pasta pizza, Roman roast leg of lamb, genuine eggplant parmigiana, and the ever popular roast stuffed turkey. In addition, because of the hurried and harried lives that most of us lead today, Father Orsini has included snappy, delicious, and practical recipes that make good use of the microwave oven.

This cookbook is designed to be read as one would read a short story-- from beginning to end. The reader can skip the recipes and gain enjoyable historic and cultural facts about Italy. For example, Father Orsini gives a brief account of the development of Italian cuisine after the voyages of Columbus, as well as delightful histories of common vegetables and popular foods, such as tomatoes, potatoes, beans, corn, turkey, and chocolate. He also includes tips for cooking the perfect pasta, general hints for the Italian kitchen, and a list of common ingredients and terms used in Italian cooking.

Once again, Father Orsini has written a charming book that will feed your mind as well as your body. You will enjoy reading this book, and your family and friends will appreciate the delicious meals you prepare by following these recipes.

Urban Italian: Simple Recipes and True Stories from a Life in Food

Urban Italian: Simple Recipes and True Stories from a Life in Food Review

The recipes that one of New York’s best young chefs cooks in his own kitchen: a cookbook full of soulful, sophisticated food and delicious stories

While waiting for construction to finish on his restaurant A Voce, Andrew Carmellini faced an unusual challenge. After a brilliant career in professional kitchens (including a six-year tour as chef de cuisine at Café Boulud), he was faced with the harsh reality of life as a civilian cook: no prep cooks, no saucier, no daily deliveries—just him and his wife in their tiny Manhattan-apartment kitchen.

Urban Italian is made up of the recipes that result when a great chef has to use the same resources as the rest of us. In these hundred recipes—covering four distinct courses, side dishes, and base recipes—Carmellini shows how to make stunning, soulful food with nothing more than the ingredients, techniques, and time available to the ordinary home cook. The food is sophisticated but also easy to make: lamb meatballs stuffed with goat cheese; veal, beef, and pork ravioli; roast pork with Italian plums and grappa; fennel with Sambuca and orange; and a honey-flavored pine nut cake.

The book opens with a narrative (written by Carmellini with his wife and coauthor, Gwen Hyman) that traces Carmellini’s culinary education—a series of outrageous tales that will delight anyone who loved Heat or Kitchen Confidential. Also scattered through the book are short pieces on places and ingredients, placed alongside recipes to shed light on the history and practice of simple, beautiful cooking. This is a book you’ll find yourself using all the time—to cook from for weeknights and for special occasions, or just to sit down with and read.

Italian Family Dining: Recipes, Menus, and Memories of Meals with a Great American Food Family

Italian Family Dining: Recipes, Menus, and Memories of Meals with a Great American Food Family Review

The author of the beloved classic Italian Family Cooking teams up with his daughter for a book that is part recipe treasury, part family memoir--and totally irresistible!

James Beard Award winner Ed Giobbi’s passion for fresh, seasonal fare, lovingly prepared, was nourished in a family to whom food was a sacred pleasure. Craig Claiborne, the late New York Times food critic, said, "Some of the most memorable meals of my life have been taken in Ed’s kitchen."

Now, 30 years after Giobbi’s first cookbook, Italian Family Cooking, became an instant classic, he and his daughter, Eugenia Bone, have produced a wonderful companion volume on the art of preparing fabulous seasonal meals. Taking as inspiration the Italian countryside in Liguria where the Giobbi family has its roots, Italian Family Dining will show the reader how to combine dishes to put together unforgettable spring, summer, fall, and winter repasts.

Scrambled Eggs with Scallops and Morels, Mesclun Salad, and Strawberry Flan make a delicious quick spring meal, while Grilled Duck Breast, Warm Beet and Potato Salad, and Sliced Pears with Cheese combine spectacularly for a fast fall dinner. Throughout the book Eugenia Bone shares warm family reminiscences--and the recipes for Italian-style dining are simple but elegant, created by one of America’s great home cooks, Ed Giobbi.
